If you're looking at software for vinyl to CD (and MP3), I recommend Polderbits Sound Recorder. Does some fairly intelligent track splitting with a decent editing interface for anything you've missed. It saves directly to mp3, among other formats.
I used that to convert a whole heap of cassettes to MP3 CDs for the car and managed to get quite adequate sound quality out of 'em. You'd do a lot better with the vinyl (and the software has anti-click and anti-pop filters).
